Callaloo Recipe

Here is my very simple, tasty version of a classic Trini dish called Callaloo. It’s a great health tonic that builds your immune system and keeps your iron levels up.
Serves: 4
Preparation & Cooking Time: 60 minutes
4 packages chopped spinach or other green leafy vegetable
4 chopped okra
2 slices chopped bacon
salt to taste
1 sprig of thyme
1 cup coconut milk
1 chopped chili pepper
Supa Soca mix by DJ Crown Prince
Mix all ingredients in a pot and simmer until tender
Wine your waist and dance! 
Enjoy with white rice and Stew Chicken
